Emily’s ‘Ice-box’ Cake

Emily sent in her own version of an ice-box cake (remember Rosemary’s baby show menu and our Ginger and Lemon Ice-box cake?) for you to make at home. Thanks Emily!!

When i usually make it i only use 1 packet of biscuits and tub of cream but because i wanted to make a Heart I used more. So I’m just giving the recipe of what I usually use. Serves 4 to 6 people.

Ingredients

1 tub of cream

1 packet of chocolate ripple biscuits

Optional Chocolate to drizzle over the top

Fruit to put on top.

Method

Whip cream. Spread a thin layer of cream on the plate to the area of the size (and shape) you want your cake and then start putting the biscuits on the plate, layering with cream between each biscuit.

When its the size and shape that you want, cover with the rest of the cream.

Then you can drizzle melted chocolate over the top and add berries or whatever decoration you desire.
