Ingredients:

- 800g organic diced beef
- 2 tbsp olive oil
- 1 large brown onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped into chunks
- 2 parsnips, peeled and cut into chunks
- 1/4 small pumpkin, peeled and cubed
- 1 large potato or sweet potato, cubed
- 2 cups chopped kale or silverbeet (stalks removed)
- 1 cup of green beans, trimmed
- 2 tbsp tomato paste
- 1 cup organic beef stock
- 1 cup water or red wine (optional)
- 1 tsp thyme (dried or fresh)
- 1 bay leaf
- Sea salt & cracked pepper to taste
Instructions:
- Preheat oven to 160°C (fan-forced).
- In a large oven-safe pot or Dutch oven, heat oil over medium-high heat. Sear beef in batches until browned, then set aside.
- In the same pot, sauté onions and garlic until soft. Stir in tomato paste, cooking for 1–2 minutes.
- Return the beef to the pot, add carrots, parsnips, potato, and pumpkin. Pour in stock and water (or wine), then add herbs, salt and pepper.
- Bring to a gentle simmer, cover with a lid, and transfer to the oven.
- Cook for 2.5 to 3 hours until beef is tender and sauce thickened. In the final 15 minutes, stir in chopped leafy greens and beans.
- Serve with a side of crusty sourdough or mash for the ultimate winter comfort meal.
